Guilt Free Burritos

My typical go-to recipe when I want Mexican food is usually this one but I was feeling something a little more fresh and fewer calories.

(Side note: I despise these red plates, the first thing we're registering for is crisp white dishes. I'm thisclose to just buying some now)

Ingredients:
-Package of whole wheat tortillas in burrito size
-2 cups cooked shredded chicken (shredded cooked chicken breasts or deli section already shredded chicken will work!)
-1 can black beans-rinsed and drained
-1 cup re fried beans
-1/2 cup diced green peppers
-1/2 cup finely sliced green onions
-1 cup salsa of your choice
-1 cup cheese
This wonderful invention made chopping my onions and green pepper a lot less time consuming! Worth every penny.

Directions:
-Preheat oven at 375 degrees
-Spray non-stick spray on baking pan, set aside.
-Mix together green peppers, green onions, black beans, salsa, and chicken.
-Spread a spoonful of re fried beans on the middle of each tortilla.
-Put 2 spoonfuls of chicken mixture in tortilla, wrap in any style you like. 
-Sprinkle with cheese and bake for 20 minutes.
-Optional: Top with sour cream and salsa

Serve with some Mexican rice (and a Corona) and you're ready for a mid-week Mexican fiesta!

Weekend Photo Dump

We had another busy but fun weekend.  Time seems to be flying by! We didn't have any plans for Friday night but after looking at the weather for this week we decided to go the State Fair on Friday evening.  At 90 degrees it was going to be the coolest of the days, yikes! It ended up being a beautiful night, we walked around, listened to live music, drank beer, and got our three must haves at the fair: Australian Potatoes, Cheese Curds, and Sweet Martha's Cookies.  You can literally find anything that you are craving at this fair, there's even some items you would never even dream up.   A few new items this year are Wine Glazed Deep Fried Meatloaf, Fried Pickles 'n' Chocolate, Bacon Wrapped Shrimp on a Stick. See what I mean? Bet you couldn't have dreamt up those little dreams. Not going to lie, our state fair is pretty bad ass.  I just read that it is the "largest state fair in the US by average daily attendance."  Take that!

On Saturday, I went to my friend Karissa's wedding shower.  It was a great shower and I am so excited for the wedding!  After that, my friend Becky and I decided to go to a local winery while our men were at a golf tournament. 

Sunday was another busy day with a Diaper Shower, shopping with my sister, and coming home to read and RELAX.

Homemade Pizza

Ok, so I cheated.  They aren't really 100% homemade because I bought the ready made crusts BUT we didn't dial a number to get it delivered to our door so I say it's a win.  I love knowing what went into these pizzas and knowing the people that made them washed their hands beforehand (gag).  They just taste SO much better and they aren't dripping in grease.  I got two small crusts this time so that K and I could each personalize our pizza the way we wanted.  I'm not a huge meat eater and let's just say K's favorite pizza from Pizza Luce is called The Bear and I just have to share a couple of lines from its description: "This is what it feels like to win a meat raffle! Not recommended for vegetarians. " Yeah...see why we need two different pizzas?

My pizza included: mozzarella cheese, pizza sauce, jalapenos, and green peppers. Bomb baby.

K's: He's a sauce man so lots of sauce goes on his za, mozzarella cheese, a lot of pepperoni, and jalapenos.

Pile your favorite toppings on the crust of your choice, we used Boboli and I would highly recommend it, bake for 8-10 minutes at 450 degrees and enjoy!

 

I need to remember to keep all of these ingredients on hand because it is just too easy and so good!

Wedding Planning Update...

First of all, I promise my blog will not turn into an all wedding blog;)  For now, it is consuming my life so here's the latest...

Our date, venue, photographer, favors, and my hair/makeup girl have been BOOKED and decided on!  I love crossing things off my list, and I ALWAYS have a list...or 8.

I'm glad I took all of my friend's advice about looking into venues right away since they tend to book up quickly.  We wanted to have our wedding in September or October of 2014 so I started calling some of the places we were interested in.  To my surprise, a majority of their Saturday's were booked up!  Crazy

I'm most relieved to have our venue picked and the deposit made.  That was a big decision for us, we wanted to make 100% sure we wouldn't have any regrets after the decision had been made. I know we would have been happy with the other contender (we had three we liked and were deciding between but ended up narrowing it down to two) but I feel we would have always thought about "our favorite".  The feeling of knowing where our wedding ceremony and reception will take place and picturing all of our friends and family filling the seats is so exciting.  Also, knowing the date and how much significance that date will hold for the rest of our lives is so crazy but awesome:)

The pictures do not do it justice, it's truly a large, beautiful venue and I wouldn't change a thing about it.



Choosing our photographer for the big day was also very exciting.  We asked our friend Jess, she is also the one that took pictures at the engagement party.  I love that we feel 100% comfortable with her and that we know that she won't let us down and that she will capture the best moments.  It's just a relief to know that piece of the puzzle is complete!

Another detail nailed down, hair and makeup for the big day!  I knew who I wanted to do my hair and makeup for the day immediately so I figured why not ask her now and get the date blocked off on her calendar? One more thing I can check off on my list :)
