Burrito Bowl

As I've mentioned before, we are really trying to not go out to eat as often.  Believe it or not, we're actually doing pretty well! I crave Mexican food and Chipotle a lot so I figured I better start getting creative with at home meals that replicate things I order at restaurants.  So, last night we had burrito bowls.  Even better? My version was only 350 calories AND I was satisfied all night. I usually find myself salivating over thoughts of ice cream at about 8 o'clock every night and I'm shocked to say that wasn't the case last night.  Score!

The only steps are to cook rice and chicken-shred chicken with fork-and set out all of your ingredients for your very own burrito bar

1/4 cup shredded chicken-1/2 cup green pepper-1/4 cup corn (frozen or canned)-1/4 cup black beans-1/2 cup brown rice-1/4 cup shredded lettuce-2 spoonfuls of salsa

 
If you're really feelin' crazy, add sour cream and cheese (or jalapenos if you're like me and enjoy HEAT)!
